Ingredients:
2 cups cabbage, finely shredded
1/2 cup fresh coconut, shredded
1 small onion
4 small green chillies
4 cloves of garlic
1 tsp chilli powder or to taste
1/4 tsp turmeric powder
1 tbsp urud dhal
1 tsp coriander powder
1 tsp mustard seeds
1 lime
1 and 1/2 tbsp coconut oil
Salt to taste
Method:
Get all the ingredients ready beforehand because this is a very quick dish and you need all the ingredients handy.
In a food processor, roughly chop up the onion, garlic and green chillies.
If you don't have a food processor, you can do this using a regular Pestle & Mortar.
Heat the oil in a pan on a low to medium flame.
Add the mustard seeds and urud dhal. Wait until the mustard seeds splutter.
Add the onion, garlic and green chilli mixture. Combine well.
Add the coriander powder, chilli powder and salt.
Saute on a low flame until raw smell of the spices disappears.
Add the coconut and mix well.
Add the cabbage and turmeric powder. Mix well and cook for a few minutes till cooked through.
Switch off the flame, squeeze in the lime juice and combine well.
Enjoy as a side dish with rice and curry. Yum!
XOXO, Jovanka
