Coleslaw is usually eaten as an accompaniment to foods such as BBQ meats and fried chicken. It is also used in a sandwiched, hamburgers and hot dogs.
I love coleslaw… who doesn’t, right? In fact, if it’s made just right, I could eat mounds of it. Which is why, I decided to attempt making it, but I wanted to do it minus the mayo. So as usual I put on my 'research cap' and went through a ton of recipes.
During my search, I came across some interesting facts. Like did you know that coleslaw has many variations across many countries?
In Italy, it is called "Insalata Capricciosa", which means capricious salad and is made with cooked ham and sliced pepper.
In the USA, coleslaw often contains buttermilk, mayonnaise and carrot. There are also recipes that incorporate mustard or vinegar without mayonnaise. Their BBQ Slaw or red slaw is made with ketchup and vinegar rather than mayonnaise.
The swedes traditionally enjoy it with pizza. Their version is prepared with a vinaigrette made up of vinegar or vinegar essence, vegetable oil, salt and seasonings.
In the UK, coleslaw almost always has carrots and red onions along with the cabbage. Some combinations include nuts such as walnuts and dried fruits such as sultanas or raisins.
So, I decided to attempt a recipe without the common mayo, and opted to add some fruits and balsamic vinegar instead. I loved it, and so did everyone at home. It had a sort of sweet, tangy taste to it and went well with the baked lemon fish I had prepared for dinner. It is definitely gonna be a regular dish in our house. Hope you guys enjoy it too!
Method:
Add all the ingredients other than the strawberries and combine well.
Now add the sliced strawberries and gently toss.
Enjoy alone or with some grilled fish, chicken or meat.
Yummy ;)
