The taste of my childhood. Colourful birthday parties, Christmas goodies and afternoon teatime get-togethers with family and friends... Sri Lankan Pol Toffee or Coconut Rock is not only popular with children, it's a firm favourite with most adults, too.
Made with a tempting combination of fresh shredded coconut, sugar and spices; it is soft, chewy and absolutely delicious. Best part? It doesn't really take that long to make.
Coconut Rock is a great homemade treat to have whenever your sweet tooth acts up. It's also a wonderful option to serve at parties as an easy dessert or can be added to little goody bags or used as party favours.
I've mostly taken my mum's recipe and added my own twist to it. Hope you guys give this a try.

300g castor sugar
400g fresh coconut, shredded
1 cup of water
1/4 tsp salt
1 tsp almond essence
3 cloves
1 cardamom
1/2 tsp food colouring
50g butter
Method:
Lightly grease a square, deep dish or tin and leave it aside.
Into a deep pan, add 80% of the sugar along with the water. Keep in mind, it is not necessary that you need to use castor sugar, regular sugar will do too.
While continuously stirring, bring the mixture to a boil on a low-medium flame. Ideally, use a wooden spoon for this process.
Then add the almond essence, salt, cloves and cardamom.
Keep stirring.
Add the food coloring and stir well. I've used green, but you can use any colour.
Now add the fresh coconut and mix well till the colour has spread through all the ingredients evenly.
Continue stirring for a couple of minutes.
Add the balance sugar along with the butter and combine well.
Keep stirring until it reaches the desired consistency. The sugar liquid should ideally be absorbed into the coconut almost completely and the mixture should leave the sides of the pan.
Don't forget to remove the cardamom and cloves before you transfer the mixture to the greased dish or pan. We don't want anyone biting into it!
Immediately, add the mixture to the greased dish and spread it as evenly as possible. You can also opt for a parchment lined dish or tray.
Take a piece of parchment paper and use it to press down on the mixture all over. This helps to make the mixture smooth and flat and aids the setting process.
Leave to rest and cool down for at least 10 minutes.
Now using a sharp knife, cut to the desired shapes. I usually do squares or rectangles.
Once completely cooled down and the pieces come out easily, store in an airtight container.
