My QuickFIX Savoury Rice


This recipe is what I call my ‘quick fix’ meal. It’s simple, easy and done in a jiffy. What's more, it is all done in a single pot. I usually make it in the rice cooker. 
You can have it plain, with some Chinese Chillie Paste or with some lime pickle and pappadam. Yum!

This recipe serves around 5 to 6 people. But you can reduce the quantities if you like.


Please note: You can always add any other ingredients like carrots, beans, cabbage, etc. You also need not use two varieties of dhal. One will do. It all depends on what is available in your kitchen and what you like, of course ;)



First and most importantly, it always helps to be prepared. So get all the ingredients together beforehand. This way you spend less time in the kitchen and more time enjoying the food itself!

 


Heat the butter in the pan. Add the onions and fry till translucent. 

 

Add the two kinds of dhal and potato. Mix. Add the chicken stock cubes, salt and pepper.

 

Add green peas and spring onions. Mix. Add the rice and mix well. 


Leave it to cook for about 2 minutes.


Add sufficient water and boil. When adding the water, I always follow the principle of for each cup of rice, add 2 cups of water. But in this recipe I added two additional cups, keeping in mind the potatoes and dhal. Of course, it's up to you, how you like the rice. I like it really mushy, so I keep adding water till it reaches the consistency I want. So, depending on how you like it, you can make it. 


Voila! Here is the final dish. As i said earlier, you can have it anyway you like it... 
In my opinion, it's best with Lime Pickle and Pappadam!
