Mum's Roast Beef


My mum's cooking is awesome. And the best part is, she cooks purely by instinct... never measures anything! I actually had to force her to give me the measurements, which she did by guess work. All in all, it came out well and has become a firm favourite with the hubby. Hope you guys try it out for yourselves. 

Please Note:
I added green chillies, onions and tomatoes to make a kind of a stir-fry. You can experiment with a host of other ingredients too after the beef is done cooking in the pressure cooker. In the past, I've also added a bit of honey and teriyaki sauce when frying the slices of beef.

Ingredients:


Main: 

500g beef, medium chunks 

1 medium tomato, sliced 

1 medium onion, sliced 

3 to 5 whole green chillies, slit 

2 tbsp coconut oil

 

For the beef: 

2 tsp pepper powder or to taste 

Salt to taste 

3 cloves 

3 cardamom 

1-inch piece of cinnamon 

2 tbsp soy sauce 

1 1/2 tbsp white vinegar 

Water as required


Method:

Gather all the ingredients together.

 

In a pressure cooker, add all the ingredients listed under 'For The Beef' and mix well. Ideally, this should be marinated for at least 30 minutes. I've marinate it overnight. Trust me, the taste comes out way better, but no hassles, you can make it on the go and it tastes amazing still.



Once you are ready to cook it, add just enough water to almost cover the beef. Close and cook it according to your pressure cooker instructions. The beef should be nice and tender once done. You can also cook it in a normal pan, but it will take longer.


Once the pressure comes down, remove the beef from the pressure cooker. There may be some liquid still remaining. This is the ideal condition. Separate the beef from the liquid, slice and set aside.


Add oil into a shallow pan and heat it. I have used coconut oil, but feel free to use any other kind if you desire. I just love the flavour of coconut oil. Island girl I guess!


Add the sliced beef and fry for a few minutes. It's not necessary, but if you like, you can add the remaining gravy from the pressure cooker and boil it down.


Add the onions, tomatoes and green chillies. Saute for about 3 minutes on a medium flame.
At this time you can taste for salt, but I've never had to add more so I'm almost certain, you won't need to either.


Enjoy it with bread and butter, in a tortilla roll or even with some rice and curry. 
It also makes yummy toasties.
