Raita (Yogurt Salad)

This cool, creamy and delicious side dish is originally an Indian, Pakistani and Bangladeshi condiment. Made with a base of soothing yogurt it is a must-have accompaniment to spicy Indian dishes. It can also be used as a sauce or dip, or a salad. It is usually seasoned with ingredients like coriander, cumin, Chilli pieces, mint and other herbs and spices. Some variations also include fruits like apple, pomegranate and pineapple.

This recipe is my go-to quick one. I usually make it with whatever I have on hand, but these are usually the basic ingredients I use.

Get all the ingredients together.

Place the onions, green chillies and tomatoes in a bowl.

Add the salt and chillie flakes and mix.

Add the yogurt and mix.

Refrigerate until you need to serve it.

Before serving, sprinkle with some chilli flakes or even chopped cilantro. This is the perfect accompaniment to Biriyani. Enjoy.
