Ladies Fingers & Potato Stir-Fry

Gather all the ingredients together.


Cut the ladies fingers into bite-size pieces. Deep fry them until slightly crispy. 
Drain and set aside.



Heat about 2 tablespoons of oil in a wok. Fry the potatoes until brown spots appear.


Add the sliced onions, curry leaves, sliced green chillies and crushed garlic. 
Stir-fry for about 3 minutes.


Add the chopped tomato and stir-fry for a further 1 minute.


Add the remaining spices and stir-fry for about 2 minutes.


Finally, add the fried Ladies Fingers and stir-fry for about 2 minutes.


This dish goes well with rice and curry, bread, chapati, roti and even parotta. 
It would also be delicious in a fajita roll. Enjoy!
