Heat the oil in a pan, then add the onions, mustard seeds, green chillies, pandan leaves and curry leaves.
Once the onions turn translucent, add all the spices other than the salt and Maldive Fish. Stir and cook for about a minute.
Now add the snake gourd and mix well.
Cover and cook for about 3 minutes
Now add the Maldive Fish and salt. Cook for another 3 minutes.
Add the coconut milk and cook for a further 2 to 3 minutes.
Enjoy this dish with steamed white rice.
