Breakfast Bruschetta


So this happened quite by accident one evening while we were at home, watching movie after movie and enjoying the Eid holidays. My husband said he was hungry and it was then that we realised we hadn't even thought about dinner and it was after 10 o'clock! 

I decided to make breakfast for dinner... sausages, bacon and eggs. But me being me, I just had to make it a little more interesting, so I thought why not Bruschetta as I had some crusty bread at home. This is my own take on what is commonly served as a starter (an antipasto). As you can see in the definition below, you can put almost anything on top of the bread. So enjoy!



The Bread:

First cut the bread. Thicker slices are better. Butter both sides. You can brush on a little olive oil if you don't want to use butter. Then toast it on both sides. I did it on a flat pan over the stove, but you could use a toaster. Just make sure the bread is really well done, nice and crispy.

The Salsa:

For the salsa, add a little butter or olive oil into a pan, then put in the finely chopped onions and minced garlic. Once the onions are done and the garlic is very lightly browned, add the chopped tomatoes and stir. Remember, when chopping the tomatoes, remove the seeds and liquid part, because this may make the salsa too watery. After about 2 minutes, add the tomato ketchup. You can even substitute the ketchup with hot sauce or any other sauce of your preference. Saute for about another minute and then leave aside to cool down.

The Scrambled Eggs:

For this recipe I used dry herbs. Of course, you could use the fresh kind too. In addition, you can use different ones. Whisk together the eggs, milk, thyme, basil, salt and pepper. Now heat a little bit of butter or oil in a pan. Add the egg mixture and leave it for about a minute. Then start scrambling it until done.

Bacon:
Cut the bacon into strips and fry well till done. Leave aside to cool down.

Sausages:
Fry the sausages and leave them aside. Once they cool down, cut them lengthwise in halves.

The layering process:


Place the bread on a plate and spread the salsa.


Now place the sausages.


Over this, spread the scrambled eggs. The plate is gonna get messy, but don't worry.


Now layer the bacon strips.


Finally, grate some cheese over it. You can use any type of cheese for this.


If you don't like a messy plate, remove the Bruschetta gently and lay it on a clean one.


Enjoy it any time... it's really easy to make and so delicious.
