You don’t need to be familiar with Sri Lankan cuisine to relish its bright, varying and complex flavours. And it doesn't matter if you are vegetarian or a meat eater either. There's something for everyone.
Growing up in Sri Lanka, my mum and dad made it a habit to get us to try everything and anything. Thank God for them, otherwise, I may have missed out on a number of culinary treats.
On the other hand, I must admit to not liking quite a few things... radish being one of them. I remember, I used to dread having to eat it. Yet, now that I'm all grown up with a family of my own, I find myself craving my mum's and grandma's cooking all the time, including radish! So this is my attempt to recreate some of those recipes. Hopefully my kids would learn to love them too.
This recipe requires quite a number of ingredients. But don't worry, they are all easy to find and the preparation is quite simple.

Ingredients:
Main:
2 cups radish, julienned
1 tsp fenugreek seeds
4 cloves
3 cardamom
1” piece of cinnamon
1 strip rampe (pandan leaf)
1 small tomato, sliced
1 cup fresh coconut, grated
½ a cup of thick coconut milk
2 cups of water
2 tbsp coconut oil
The Curry Paste:
1 small onion, sliced
1 small piece of ginger
4 cloves of garlic
1 sprig of curry leaves
3 green chillies, chopped
¼ tsp turmeric powder
1 tsp chilli powder
2 tbsp unroasted curry powder
Salt to taste
Method:
To make the curry paste, using a food processor or mixer, grind the turmeric powder, chilli powder, un-roasted curry powder, salt, onion, ginger, garlic, curry leaves and green chillies into a fine paste. Set aside.
Heat oil in a pan, add the pandan leaf, cinnamon, cloves, cardamoms and fenugreek seeds. Saute.
Now add the curry paste.
Saute until the rawness is gone.
Add the sliced tomato and mix well. Cook for about 2 to 3 minutes.
Add the cut radish.
Mix well until all the radish pieces are well coated in the spice mix. Stir-fry for about 2 minutes.
Now add the fresh grated coconut.
Add the water and mix well and bring to a boil.
Now lower the heat and simmer for about 15 minutes.
Finally, add the coconut milk, mix well and simmer for a further 5 minutes.
The radish curry is done. Enjoy with your favourite rice and curry.
