French onion soup is one of my favourite go-to's when I want to make something quick, easy and yet delicious. This rich onion broth just oozes with wholesome comfort.
The best part is, it doesn't require very many ingredients. I guess this is because Onion Soup originated in the older days when poor people had to make the best out of the little they had. Today, it is enjoyed the world over!!!
Note: For a variation, you can add white wine instead of water.
This recipe makes 2 big cups
Cut the onion in half and finely slice to form half moons. Then cut these in half again.
Heat the butter over medium heat and add the sliced onions.
Stir and cook over medium heat until they are slightly caramelised and
tender (Around 6 - 7 minutes). Remember, if they get too dark the soup may taste bitter.
Now put the flour in and stir until the onions are all well coated.
Pour in the water and bring to a boil.
Now reduce the heat, cover the pan and let the soup gently simmer for around 10 minutes. Around the 8th minute, lift the lid to let the liquid reduce a little.
Add the salt and pepper to season. Let it simmer for another minute or so.
Serve with fresh grated
cheese. I opted not to add the cheese as I served it with spinach and chicken filo pastry rolls.
You can serve it with crackers, any kind of crusty bread or even steamed vegetables.
