If you're anything like me, you will always have a piece of leftover cabbage in the fridge. This usually comes in handy when I want to throw together a quick and delicious salad to go along with whatever main grilled or roasted dish I've made that day.
The best part... you can add any variation of fruits or vegetables to the cabbage if you don't have any of the ones listed in the ingredients section below. I've used pears, apples, carrots, bell peppers and even raw papaya on various occasions.
Trust me... this is one dish you can never get wrong!
INGREDIENTS:
2 cups cabbage, shredded
1 cup cherry tomatoes
1 cup diced pineapple
1 cup pomegranate seeds
1 tsp red chilli powder or to taste
Salt to taste
Clean, wash and get all your ingredients ready.
Add the tomatoes, pomegranate and pineapple to the cabbage.
Combine well.
Add the salt and chilli powder.
Mix and taste to check seasonings.
Enjoy alone or with some roast beef, steak, grilled chicken, etc!
