Easy Mutton Fry


Tender pieces of boneless mutton enveloped in a melange of flavorful spices and stir-fried to perfection. This mutton fry is a quick and easy recipe, which goes well with anything and also makes a delicious appetizer or 'bite'.


The trick to making this crispy and spicy fusion of perfectly cooked meat is ensuring the mutton is nice and tender. There are many ways to tenderize the meat, but the method I use and have mentioned below is one I got from one of my very good friends, Fathima Arzoo, who owns and runs this amazing South Indian restaurant in Dubai, UAE - Lallumma's - serving home style traditional Keralite dishes.  Ingredients:


500 grams boneless mutton, cooked

½ tsp turmeric powder

1 tbsp ginger & garlic paste 

3 tbsp coconut oil 

8 cloves garlic, chopped 

4 green chillies, slit

1 to 2 sprigs of curry leaves 

2 tsp chilli powder

1 tsp pepper powder

1 tsp garam masala powder 

Salt to taste

Juice of 1 lime


Method:


To tenderize the meat:
Place the cut pieces of mutton inside a pressure cooker. Add 1 big chopped tomato, 1 big sliced onion, 4 cloves of chopped garlic and about 1/3 cup of water.
Close and pressure cook on high for 1 whistle, then turn the heat to low and cook for 30 minutes straight.
This method works perfectly for all meats like mutton and beef.

To make the mutton fry:


Add the cooked mutton pieces into a dish or bowl.

 Toss in the turmeric powder, chilli powder, pepper powder and garam masala powder.

Add the ginger and garlic paste.

Squeeze in the lime juice.

Combine well and leave aside to rest for at least 10 minutes.


Now place a clay pot or regular pan on a medium to low flame, add the oil and heat.

Add the garlic, curry leaves and chillies and saute for few seconds.

Add in the mutton pieces and combine well.

Keep frying while stirring in between until the meat turns a beautiful golden brown.


Do not over fry as the mutton may become too dry.


Serve hot as an accompaniment to biriyani, steamed rice and vegetables, rice and curry or even as an appetizer.
