Homemade Apple Pie


This is a quick and easy recipe which I found on the web, but of course I modified it to suit my own taste. The preparation time is quite short, but the baking is 50 minutes and you have to wait at least 3 hours before you cut into it. This is because the pie could be quite runny after baking and needs this amount of time to set. Of course, you can have it earlier, if you don't mind the mess that is... :)

To begin with, get all your ingredients ready. Sorry, but I don't have step by step pictures this time. But, don't worry, the steps are quite simple to follow. 


The first step is to prepare the dough. You can do it easily in a bowl using a fork, without using a food processor or even your hands! 

Step 1:
In a bowl, mix the flour, sugar and salt thoroughly. Then make a well in the centre and add the oil and milk. You can use vegetable or olive oil for this. Mix it well with a fork. You can use your hands to mix the dough, if it's easier. It will form a crumbly and almost sticky dough. Transfer this to a board and gently bring together. Dust a bit of flour on the counter if required. Now cut it into two pieces, one for the base and one for the covering. One piece should be slightly larger than the other. The larger piece is for the base. Measure your pie dish and then roll out the base piece and line the dish. The smaller piece, make about a 5" disk out of it and cover it in a wax paper. Now place both the lined pie dish and 5" disc in the refrigerator.

Step 2:
Preheat your oven to 400 degrees.

Step 3:
In a large bowl, add the sugar, flour, cinnamon and nutmeg. Mix well and leave aside. 

Step 4:
Ideally, you should always use green apples. But you can use red as well if the green is unavailable. Peel all the apples and core them. Then chop them up into bite sized pieces. I cut them on the smaller size because I feel they cook better.

Step 5:
Now add the cut apples into the sugar mixture in the large bowl. Mix thoroughly, ensuring that every piece of apple is coated well.


Step 6:
Take the dough out of the fridge. Fill the lined pie dish with the apple filling. It may go over the top, depending on the dish, but that's ok.


Step 7:
Roll out the 5" disc of dough and cover the pie dish. Tuck in the corners and seal by pressing down with a fork. Now cut a few holes in the top of the pie to ensure that the steam goes out while baking. As the final step before baking, brush some milk over the pie, avoiding the edges. Then sprinkle some sugar over the middle, again avoiding the edges. This prevents the edges from getting too burnt. Bake it for approximately 50 minutes. Of course, this depends on your oven, so please keep checking!


Step 8:
Take it out of the oven and let it rest for at least 3 hours. Then enjoy with a dollop of vanilla ice cream or all by itself!
