Sri Lankan Bandakka Theldala (Ladies Fingers Stir-Fry)


Some call it ladies fingers, others okra. Some love it, others hate it. Either way, it is a pretty under rated vegetable in my opinion. 

Most people don't use it because of the sticky substance it has, which is why, the best way to cook it is to stir-fry or deep fry it.

Another important factor to keep in mind is, you need to pick green, fresh ladies fingers that are not wilted or showing any sign of damage. They should be firm to the touch, without any spots on the surface. In addition, it's best to consume them within 2 to 3 days from purchase, as they tend to spoil and mature fast. Mature ladies fingers become hard and dry when cooked.

Also, a basic rule to follow when cooking ladies fingers - it's best undercooked; left with a bit of a bite or crunch.

How to get rid of the sticky substance:
Once you've cut and drained the ladies fingers, place them in a frying pan on low to medium heat. Mix in 1/2 tsp turmeric powder. Now keep stir-frying the ladies fingers for about 4 minutes. Soon the edges of the pieces of ladies fingers will turn brown and sticky substance disappear. Remove and leave aside till it's required to complete the cooking process.

 Ingredients:

250g ladies fingers, cut into strips or diagonal pieces
1 small tomato, sliced
1 large onion, sliced
1 small piece of ginger, strips
3 small green chillies, chopped
1 sprig of curry leaves
1/2 tsp turmeric powder
1 tsp red chilli powder
1 tsp red chilli flakes
Salt to taste
3 to 4 tbsp coconut oil

Method:

Wash and drain the ladies fingers well. Then cut them into strips or diagonally.

At this point, if you want to remove the sticky substance from the okra, follow the steps described in the 'Cooking Tips' mentioned above.

Add the oil into a shallow clay pot or frying pan and place it on medium heat.

When the oil is hot, toss in the ladies fingers...

The onions...

The tomato...

The ginger...

The curry leaves...

The green chillies...

The chilli powder, chilli flakes, turmeric powder and salt.

Combine all the ingredients thoroughly.

Now let it cook.

Keep stir-frying in between to ensure the ingredients do not get stuck to the bottom of the pot or pan.

When the ladies fingers are nice and tender, it is done.

At this point you can taste and adjust the salt if needed.


Serve warm with rice and curry. You can even eat this with freshly made chapattis.
